Food scientists continue to test ways of changing how fried foods absorb oil. One experimental approach combines microwave pre-treatment with conventional frying, using rapid moisture loss before frying to alter the structure of the food and potentially reduce later oil uptake.

The idea is primarily a food-processing question, not a new dietary recommendation. If a technique reduces the amount of oil absorbed by a particular product under laboratory conditions, that does not automatically establish a meaningful health benefit in people.
Fat content is only one characteristic of a food. Portion size, overall dietary pattern, ingredients and frequency of consumption all matter when considering nutrition. A lower-fat fried product should therefore not be described as inherently “healthy”.
The research is best understood as an example of how food engineering can modify texture and composition. Whether such methods are practical at industrial scale or in home kitchens depends on further testing, cost and product quality.
